Our Approach to Wine
What the hell are they on about and why does it matter?
We have never been trendsetters, we have just focused on pouring wines we love to drink, from winemakers and farmers who care about the land they farm as much as about the wine in the glass. When we started out in 2019 we had a small tight list of 20 wines, after many years of tasting and travel we now we represent 180 low intervention wines from around the world.
We are constantly tasting and learning, falling in love with wines and wine makers. There’s nothing more invigorating than hearing winemakers talk about how they have made their wine and sharing that story with you. We’ve been fortunate enough to visit and host our winemakers across Portugal, France, Italy, Australia, Greece, New Zealand and Italy. What do you mean by low-intervention? Well, we favour wines from winemakers who don’t add anything or take anything away, both in the vineyard and in the winemaking process. That could mean farming organically, bio-dynamically, with little to no-added sulphur. No, it doesn’t mean that all the wines we pour and sell taste wild, natty farm-yard bonkers…have you poured me a wine or a cider in the glass. But we can understand why your mind might go there, at the end of the day if it doesn’t taste great we’re not selling it.
But how do you choose? Well, it has to wow us, we have to imagine pouring it, sharing it in that special moment. Is it that gluggable number we can see you enjoying on Margate’s steps? Is it that bottle that grabs everyone’s attention at the dinner party? Is it the perfect bottle to make your special occasion? These are the moments when we want you to celebrate with a wonderful drink from us. We try a hell of a lot of wine, a good 1,000 or so each year, so we have to go ‘wow’ amongst that for it to be worthy of being added to our roster.
